High Quality Grapes = Equals High Quality Wine
The quality of the our organic grapes is the key factor determining the characteristics and quality of our organic wine.
The quality is not only affected by the grape variety, but also by the weather during the growing season, the quailty of the soil, the timing of the harvest, and the way the plants are pruned.
The combination of these effects is often referred to by the French term terroir.
Our ripe A-Grade certified organic grapes are grown on our vineyards without the use of chemical fertilizers, weed killers, insecticides, and other synthetic chemicals. They are harvested at peak of perfection, when the grapes are naturally at their highest quality.
The “Organic One” Organic Winemaking Process involves the following:
- Harvesting – Choosing the right time to harvest the grapes is essential to wine quality. Timing is critical. Perfectly ripened grapes produce wine with maximum characteristics and nutritional value.
- Destemming – The process of separating stems from the grapes.
- Crushing/Pressing – where the skin of the grapes is broken to release the sugary juices, exposing them to the yeasts for fermentation.
- Primary Fermentation - The conversion of the grape’s stored natural sugars into alchohol and carbon dioxide. Carried out by naturally occurring wild yeasts.
- Malolactic Fermentation – The conversion of malic acid into lactic acid and carbon dioxide. Carried out by malolactic bacteria.
- Maturation – The age of the wood in which a wine is matured affects its flavour dramatically.
- Clarification/ Filtration – Once our wine has completed the fermentation process we allow it time to settle before filtration.
- Blending/ Bottling – Carefully selected batches of wine can be mixed before bottling in order to achieve futher compexity in taste.
